| Recipes for cooking rice 
						Steamed Rice1 cup long or 
						medium grain rice
 1 ½ cups cold water
 1 teaspoon salt
 
 Wash rice thoroughly. Add water & salt. Place in 
						saucepan with tight cover.  Heat quickly until it 
						is steaming freely. Then, lower heat & simmer 15 minutes 
						or until rice is tender & water is absorbed. Remove rice 
						from heat & fluff gently with a fork.
   Chinese Fried 
						Rice3 pork chops
 1 cup raw shrimp
 ¼ cup cooking oil
 1 cup bell pepper, chopped
 1/3 cup onion, chopped
 2 cups cooked rice
 4 eggs beaten
 ½ cup green onions
 
 Debone pork & cut into ½ inch pieces. Cut shrimp in 
						half. Sauté meat and vegetables in oil just until 
						tender. Turn down heat. Add rice, eggs, onion tops and 
						soy sauce. Cook until well mixed and egg mixture is 
						done. Serves 4.
   Cajun Rice 
						Dressing½ lb. Ground beef 
						or pork
 1 ½ cups uncooked rice
 1 can Campbell's onion soup
 1 can Campbell's cream of chicken soup
 1 cup hot water
 1 bell pepper, chopped
 ½ onion, chopped
 1 pimento, chopped
 ¼ cup chopped parsley
 
 In a deep pot, sauté onions, bell peppers, parsley, and 
						brown the ground meat. Add remaining ingredients; cover 
						pot with a tight-fitting lid. Bake at 350° for 1 hour or 
						until done. Serves 8
   
						Ultimate Rice Salad
 1 cup uncooked rice
 2 cups water
 10 ounces thawed green peas
 4 chopped hard-cooked eggs
 8 ounces shredded fat free Cheddar Cheese
 ½ cup chopped green onions
 4 ounces diced pimento
 1 cup diced cooked chicken
 ¾ cup pimento-stuffed olives
 1/3 cup sweet pickle relish
 ¼ cup low fat mayonnaise
 ½ cup sliced celery
 Salt & Pepper to taste
 
 
 Place water & rice in a 1 quart saucepan. Heat to 
						boiling, reduce heat, & cover pan with a tight fitting 
						lid. Simmer rice 15 minutes or until rice is tender & 
						water is absorbed. Remove rice from heat & fluff gently 
						with a fork.  Let cool.  Mix remaining 
						ingredients with cooked rice.
   Hot Rice
 9 tablespoons melted butter
 6 tablespoons chopped bell peppers
 1 medium onion, finely chopped
 4 tablespoons pimento
 1 jalapeno pepper, chopped
 1 jar sliced mushrooms (4-6) ounces
 ¼ cup finely chopped celery
 6 tablespoons lemon pepper
 6 cups cooked rice
 
 
 Sauté first 7 ingredients. Add lemon pepper & rice & 
						steam 10 minutes.
